Baked baby carrots with yogurt and garlic sauce

Most of the time when it comes to the main course of serving food, we tend to choose a side dish next to a portion of meat. We suggest you a delicious and filling version of a carrot garnish. It does not take much time to prepare, it is great in addition to meat dishes or it can even be served as an appetizer.

Preparation time: 10 minutes

Cooking time: 30 minutes

Ingredients needed for 4 servings:

  • 800 grams of baby carrots, fresh or frozen
  • 3-4 cloves of garlic
  • a pinch of salt
  • a tablespoon of extra virgin olive oil
  • 1-2 tablespoons balsamic vinegar
  • 200 grams of Greek yogurt
  • spices: rosemary, thyme, pepper, depending on taste

Preparation method:

Put the washed and cleaned carrots in a large bowl. If you use the frozen version, do not defrost them beforehand. You can also use normal carrots, which you can slice to the desired size. This way you get delicious and appetizing looking carrot sticks. Add the balsamic vinegar and olive oil over them and mix so that the liquids are spread evenly over the carrots. Add salt, pepper, rosemary and thyme and mix again.

Put the contents of the bowl in a pan (greased with oil or covered with baking paper) and try not to overlap the carrots.

Add the unpeeled garlic and place the pan in the preheated oven for about 30 minutes over medium heat or until the carrots begin to form a thin crust.

When the carrots have reached the desired consistency, take care of the sauce. Peel the garlic cloves and squash them with the fork. Then mix them with Greek yogurt and the sauce is ready.

Tip: For extra flavor, add your favorite greens to the yogurt sauce. It goes very well combined with parsley or fresh dill.

For an interesting plating, place the baked carrots on a plate next to which you will place the bowl of sauce. You can decorate the plate with fresh basil or mint leaves.
