
Tuna pasta salad, a rainbow on the palate
Most of the time we are in trouble when it comes to preparing a tasty lunch or dinner, consistent, healthy and especially ….. fast!
If the pasta combined with fish is to your liking, try the recipe and you are guaranteed to repeat it.
Ingredients needed for 3-4 servings:
- Canned tuna pieces in its own juice;
- 200 grams of fusilli paste;
- A small can of corn (200 grams);
- A small can of red beans (200 grams);
- The juice of half a lemon;
- Olive oil (1-2 tablespoons);
- A medium-sized red onion;
- Salt, pepper to taste;
- A few olives and cherry tomatoes for decoration.
Preparation time: 10-15 minutes
Preparation method:
Boil the pasta according to the instructions on the package: 8 minutes for white flour, 15-20 minutes for durum wheat or wholemeal flour. Drain well and keep under running cold water. This will prevent the pasta from sticking together.
Chop the julienned onions and drain the canned liquid well.
Add all the solid ingredients over the pasta and mix. Finally add the lemon juice, olive oil, salt and pepper. Season to taste, but do not overdo it.
TIP: If you want to avoid canned fish, you can opt for smoked salmon fillets or anchovies, and the taste will be truly divine.
