Protein-based fasting recipe

Whether you have decided to fast for religious reasons or simply want to follow a diet that excludes foods of animal origin, we suggest a recipe rich in vegetable protein, low in carbohydrates, which will keep you full. for longer.

Well, we suggest you try a delicious red bean and chickpea salad, which you will definitely want to repeat.

Preparation time: 10 minutes

Ingredients needed for 3-4 servings:

  • A few lettuce leaves
  • 1/3 canned red beans
  • 1/3 canned chickpeas
  • Half a red onion
  • 1 bell pepper
  • 2 tablespoons sweet corn (optional)
  • 10-12 seedless olives
  • 1 cucumber
  • A bunch of parsley
  • Lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Preparation method:

Thoroughly wash lettuce leaves, vegetables and greens. In a large bowl, add the chopped lettuce leaves and then finely chop the onion, pepper and greens. Then thinly slice the cucumbers and, after you have put them all over the salad, add the rest of the ingredients in the recipe.

At the end, season with olive oil, salt, pepper and lemon juice to taste, mix and …. Enjoy!

Trick: We opted for canned chickpeas as it is a handy ingredient. If you have time, for extra taste and benefits, you can buy chickpeas, and its preparation is not difficult at all.

After washing, leave it hydrated overnight in a bowl with a sufficient amount of water. The next day, drain the remaining water, cover it again with water and boil the chickpeas for about 15 minutes (until they soften and the peel begins to come off). Allow to cool and can be used as such.

As a decoration you can put a tomato or a few mushrooms.
