Quick sponge cake recipe with fruit

From time to time, a little sweet doesn’t hurt! And as the first fruits of the season have appeared with the arrival of spring, we offer you a quick and economical variant of sponge cake with fruit. You can put any kind of fruit: strawberries, raspberries, blueberries, blackberries, cherries or sour cherries.

If you can’t decide on a certain type of fruit, you can mix them or choose the cheaper frozen fruit option.

Preparation time: 15 minutes

Cooking time: 40-45 minutes

Ingredients needed for 4 servings

  • 300 grams of your favorite fruit
  • 3 eggs
  • 6 tablespoons sugar
  • 6 tablespoons oil
  • 6 tablespoons milk
  • 6 tablespoons flour (topped)
  • ½ baking powder sachet
  • 1 vanilla essence
  • A pinch of salt

Preparation method

Wash the fruit well and put it in a sieve. If they have pips, remove them and if the fruit is frozen, leave them to thaw first.

Beat the egg whites together with the salt and sugar. When they have beaten like a hard foam, add the yolks and continue to mix for about 1 minute. Then add the oil and milk and mix the composition with a whisk. Finally, add the vanilla and flour, stirring lightly with the whisk. When the composition is homogeneous, pour it into a tray (not very large, about 12/20 cm),which you have previously lined with baking paper.

Sprinkle the fruit lightly on top and put the sponge cake in the oven (medium heat, about 180 degrees) for about 40-45 minutes or until it passes the toothpick test.

Trick:

If you use large strawberries, slice them into smaller pieces, otherwise they may fall on the bottom of the tray.

However, if you are afraid that your favorite fruit will fall on the bottom of the tray during baking, put the composition in the oven for 15-20 minutes (until the cake has swelled and a thin crust has formed on top) and then remove the tray and quickly add the fruit on top. Keep the sponge cake in the oven until the cake is ready!
