Tomato cream soup, fast and super delicious, for summer

It is a simple, fast, healthy, flavorful and extremely tasty soup. It is ideal for hot summer days, late autumns when you can still find those tomatoes with authentic taste on the market and even out of season, when you can replace fresh tomatoes with the canned ones. At the same time it gives you a lot of nutrients and keeps you in shape.

Preparation time: 10 minutes.

Cooking time: 25 minutes.

Ingredients needed for 3-4 servings:

  • 1 kg fresh tomatoes
  • 2-3 cloves of garlic
  • 1 medium-sized onion
  • a pinch of salt
  • teaspoon extra virgin olive oil (optional)
  • basil leaves

Preparation method:

Put the washed tomatoes, peeled onions and garlic in a tray (greased with oil or covered with baking paper) and bake them for about 25 minutes on medium heat. If the tomatoes have not softened enough to peel them easily, extend the baking time for 5-10 minutes.

Remove the ingredients from the oven, put them into a blender, add salt, basil and oil and mix for a few seconds until you get the desired consistency of the cream soup. At the end, you can decorate with some fresh basil leaves.

Trick: For extra flavor, put the garlic cloves in the oven and peel them after baking.
